Sundried Tomato, Pine Nut & Parsley Pesto


My husband came up with this wonderfully tasty dinner last night. It was really simple:
  • Cooked spaghetti noodles, as much as you can eat :)
  • 1/4 c. pine nutes
  • 1/4 c chopped sundried tomatoes
  • 1/4 c. fresh parsley, chopped
  • Olive oil
Combine all, and serve.

This looks really delicious. Unfortunately we can't do pestos because of a nut allergy, but if we could, I'd definately be making this.

Yum! That recipe sounds great.

I've been looking for new ways to use sun-dried tomatoes, as well as for different kinds of pesto, & this fits the bill perfectly!

I can't wait to try it. Thanks!
