We've had a few yummy vegan dinners the last couple nights, but I forget that I am an author of a vegan blog now, so I forget to take photos! Oops!
I made vegan cornbread & Black Eyed Peas for dinner. Coming from a family of the South, that is a very common dinner. My father always requests it for New Years Night dinner, every year. For the corn bread, I used a mix (Bob's Red Mill) I bought on sale at the store. I subbed the eggs with Ener-G egg replacer, but I found the recipe to be a bit dry.
One thing about being a new mother, means I am no longer working outside the home. So, we are trying to save money on food stuffs by buying in bulk. Every week I make a pound of dried beans, and use them throughout the week in my dinners. This week has been black eyed peas. But, I find there aren't many recipies that call for these beans, so I have so much, I might have them through next week too.

New Food Blog!
I am such a fan of other vegan food blogs out there, so I thought I would start my own! In the future, I would love to showcase kid-friendly foods. But, my sweet baby is only a month and a half old, so he isn't eating yet. I suppose for now, I'll showcase the food I make for hubby and I.
I love to cook, and I love trying out and creating new recipes. Since becoming vegetarian, 3 1/2 years ago, I had to learn to cook all over again. Little did I know how vast the vegetarian world is with different cuisines, flavors, and life.
